Ok, kids. The flower behind them when they’re discussing ‘wheat’ varieties most closely resembles ‘buckwheat’. It’s a cereal grain, but not any relation to what we think of as ‘wheat’, and is in fact in the knotweed family. It is quite nutritious, but not nearly as calorie dense as wheat or other grass-like grains.
The beauty of buckwheat (according to my grain-farming father) is this: If your spring weather was too wet, cold, or dry to allow for the crop you were planning, you can still sow buckwheat in the heat of summer and get a crop to eat by autumn–good heat and drought tolerance, short growing season. Like some varieties of beans that subsistence farmers in parts of Africa refuse to stop growing, buckwheat will never give you a *great* harvest, but it will pretty reliably give you *something* when all other crops burn out and die.
